A Light biscuit to have with your tea or coffee Ingredients:
2 very ripe medium bananas |
3 large eggs, separated |
1 teaspoon (5ml) vanilla flavouring |
3oz (90g) flour |
pinch salt |
2 tablespoon (30ml) sugar |
Directions:
1. Preheat oven 190c, Gas ,mark 5 2. Line a baking tray with none-stick paper 3. Slice bananas into bowl of food processor of blender 4. Add egg yolks and vanilla, puree until smooth 5. Mix flour and salt together 6. In a separate bowl whisk the egg whites with the sugar until stiff 7. Gently fold in the banana mixture to the egg whites, then gradually fold in the flour 8. Spoon mixture into a piping bag that has been fitted with a plain nozzle 9. Pipe 4-inch (10-cm) fingers of the mixture on to the baking tray, leaving a space between them of about 2 inches 10. Bake for about 12 minutes or until lightly browed 11. transfer to a wire rack and allow to cool slightly 12. serve warm for best but can be eaten cold |
