Ingredients:
1 cup chorizo, sliced into 1/2-inch thick pieces |
1/2 cup red onion, diced |
2 tablespoons jalapeno, finely diced |
1/2 cup red bell pepper |
8 eggs |
1/2 cup milk |
1/2 teaspoon sea salt |
1 teaspoon pepper |
2 (9-inch) flour tortillas |
1/4 cup shredded jack cheese |
1/4 cup shredded cheddar |
1/2 cup scallions, diced |
Directions:
1. Pre heat oven to 375 degrees F. 2. In a skillet over high heat, cook chorizo. When the sausages are almost cooked through, add the onion, jalapeno, and pepper and saute until vegetables are soft. Remove chorizo mixture to a bowl and let it cool. 3. In medium bowl, mix eggs, milk, and salt and pepper. Add the chorizo mixture to the egg mixture. 4. Spray nonstick cooking spray on a pie pan, place 1 tortilla and pour the egg/chorizo mixture into the pan. Bake for 15 minutes. Remove from oven, top with another tortilla and the shredded cheeses and bake for another 5 minutes. 5. Remove from oven and garnish with scallions. Serve immediately. 6.
