Kyle's Amazing Pumpkin Pie |

I do not know the source of this recipe but, at our Canadian Thanksgiving, my friend's son had made this pie and it is the first really light tasting pumpkin pie I have ever had. Enjoy. Ingredients:
1 -9 inch unbaked pie shell |
2 cups pumpkin (not pumpkin pie filling) |
3 eggs, separated |
1 cup white sugar |
1 cup sour cream |
1 teaspoon cinnamon |
1/2 teaspoon ginger |
1/4 teaspoon nutmeg |
1/4 teaspoon clove |
1/4 teaspoon salt |
Directions:
1. Beat together pumpkin, egg yolks, sugar, sour cream and seasonings until well blended. 2. Beat egg whites to soft peak stage. 3. Fold into pumpkin mixture. 4. Pour carefully into pie shell. 5. 450 degrees for 10 minutes. 6. 350 degrees for 60 minutes (or until set). 7. Allow to cool at room temperature and then refrigerate. |
