I got this from my sister who said she found it in a cookbook. She uses English cucumbers, Walla Walla onions, red jalapenos, fresh cayenne peppers or thai peppers. She also said she uses a lot of cilantro because they love it. The sauce can be doubled or even quadrupled and stored in a jar in the fridge. Note: Some people use dried pepper flakes (the kind you put on pizza). Ingredients:
1 cup sugar |
2 teaspoons salt |
3/4 cup white vinegar |
1 cucumber, thinly sliced |
1 red onion, thinly sliced (or whatever onion you like) |
3 -4 jalapenos, chopped fine (or peppers of your choice) |
chopped cilantro (as much as you want) |
Directions:
1. Combine the sugar, salt and vinegar in a saucepan and heat until ingredients dissolve. Cool in refrigerator. In a bowl, put the sliced cucumber, red onion, jalapenos, and cilantro. Stir in as much of the sweet and sour sauce as you want. Serve chilled. 2. Note: The servings depend on how big the cucumber is. |
