Kusherie is an Egyptian rice and lentils recipe very easy to make. In Egypt plain yogurt is served as a side dish. Ingredients:

2 tablespoon oil |
1 1/4 cup lentils |
3 cups boiling water |
1 teaspoon salt |
dash pepper |
1 1/2 cups rice |
1 cup stock |
sauce |
3/4 cup tomato paste |
3 cups tomato juice, tomato sauce, or pureed tomatoes |
1 green bell pepper, chopped |
chopped celery leaves |
1 tablespoon sugar |
1/2 teaspoon salt |
1 tablespoon cumin |
1/4 teaspoon cayenne pepper or crushed chilis to taste |

2 tablespoon oil |
3 onions, sliced |
4 cloves garlic, minced |
Directions:
1. RICE: Heat in heavy saucepan or covered skillet 2 Tablespoon of oil, add the lentils and brown lentils over medium heat for about 5 minutes, stirring often, add 3cup boiling water, salt, pepper and cook uncovered 10 minutes over medium heat. Stir in rice, and stock and bring to boil, reduce heat to low, cover, and simmer 25 minutes without stirring. 2. SAUCE: heat together all ingredients and bring to boil, reducing heat and simmer 20 - 30 minutes. 3. BROWNED ONIONS TOP: Heat in small skillet until brown onions, and garlic. 4. TO SERVE: Put rice - lentil mixture on a platter, pour tomato sauce over and finally top with brown onions. Enjoy it! |
