Kumquats Dates And Shaved Parmesan Salaad |

Source: Florida Kumquat growers. Kumquats are cute and a whole new taste treat. They play off the sweetness of the dates and the bitterness of the arugula very well in this salad. Ingredients:
8 kumquats (bright vibrant orange is best) |
4 handfuls of baby arugula |
1/2 flat leaf parsley, rough chop |
4 medjool dates, pitted and diced |
1/4 cup of parmesan cheese, shaved with a vegetable peeler |
for dressing |
1 tbsp of lemon juice |
2 tbsp of extra virgin olive oil-i used three to cut the lemon a little more |
kosher salt and several grinds of fresh ground black pepper |
Directions:
1. Slice the kumquats into rounds, discarding the bitter seeds. 2. Combine the arugula, parsley, dates and kumquats in a large serving bowl. 3. Whisk salad dressing, season with salt and pepper. 4. Pour over salad and toss. 5. Top with parmesan shavings. 6. Don't forget the flesh is tart and the rind is sweet, it is a pleasant taste twist. |
