Kumquat Pomegranate Punch |

This recipe is from Everyday with Rachael Ray magazine. This drink is so good and refreshing. The best part is eating the fruit thats been sitting in the punch. The recipe calls for some sugar and I usually only use half the amount because I dont like it so sweet but sweeten to taste. Ingredients:
5 cups kumquats, sliced in half |
1 1/4 cups superfine sugar |
3 1/2 cups orange-flavored vodka |
5 cups pomegranate juice |
2 pomegranates (seeds only) |
Directions:
1. In a medium bowl combine kumquats and sugar; let stand for 10 min's. Stir in the vodka and let stand at room temperature for at 1 hour or refrigerate overnight. 2. In a large pitcher, stir together the vodka mixture, pomegranate juice and seeds. Serve over ice. |
