Kumara Tomato And Blue Cheese Salad |

This warm salad is great served with either steak or fish or chicken. the blue cheese melt & becomes the most amazing dressing Yum Ingredients:
2 lge kumara (sweet potatoes) – washed & diced |
6 cloves garlic – smashed without peeling |
4x truss tomatoes – (tiny- grape or cherry) |
100g blue cheese |
olive oil |
1 tsp cumin seeds |
1/2 bunch basil |
Directions:
1. Put oil into baking pan add sweet potato and place over heat on cook top for a few minutes. Add garlic, cumin seeds and toss then add shred basil, drizzle with more oil and season with pepper, toss again. 2. Put in moderate oven, after 5 mins add tomatoes on top of sweet potato and bake for further 20 –25 mins. 3. Place tomatoes on outer edges of serving platter and sweet potatoes in the centre and top with crumbled blue cheese. |
