Kumara Sweet Potato And Orange Salad |

This salad has a unique flavour and is delicious with Barbequed meats during summer. It adds colour to your plate - it looks like a sunset. Ingredients:
1kg sweet potato/kumara |
approx 4 oranges |
400ml potato salad |
approx 3 spring onion shoots (cut up thinly) |
1 tsp curry powder (add more if the flavour isn't coming through enough) |
salt and pepper |
Directions:
1. Peel and dice the Sweet Potatoes/Kumara into bite sized chunks 2. Boil in salted pot for around 15 minutes or until a knife slides easily through the chunks 3. While it's cooking mix together the Potato Salad and Curry Powder and add salt and pepper 4. Peel and cut up the Oranges into chunks of the same size 5. Drain the Kumara and leave to cool - If you are in a hurry put into the fridge to cool down 6. Once cold add the Orange pieces, Spring Onions and the Potato Salad/Curry Powder mixture 7. Stir through and serve in a large serving dish |
