Kumara and Spinach Farfalle |

Adapted from a magazine called Recipes+ Ingredients:
400 g kumara, peeled, finely diced |
350 g farfalle pasta, also called bow tie pasta |
2 teaspoons olive oil |
1 onion, finely diced |
1 garlic clove, crushed |
150 g baby spinach leaves |
3/4 cup cream, lite is ok |
grated parmesan cheese |
salt and pepper |
Directions:
1. Boil or steam kumara till tender for 6 - 8 minutes, drain. 2. Cook pasta according to instructions. 3. Heat oil and cook onion till soft , about 4 minutes. 4. Add garlic, kumara and spinach, stir till spinach wilts. 5. Add to drained pasta along with cream and seasoning. 6. Toss together lightly, serve with cheese on top. |
