Unlike western ice creams, which are whipped or overrun, kulfi is solid, distinct dense frozen , dairy based dessert. It is sold by street vendors , by placing the moulds inside a large earthen pot filled with ice and salt. Read more . It is served on a plate or frozen onto a stick, and garnished with pistachios, cardamom or vermicelli noodles . . Ingredients:
5 1/2 plus 1/2 cc milk / evaporated milk |
8 tbsp cornflour , mixed |
1 1/2 c mawa ( add a pinch of soda to the boiling milk , stirring until it thickens ) / sweet condensed milk and skip the caster sugar |
1 1/2 caster sugar and 1 c heavy cream - mixed |
few drops of essence |
few almonds , pistachio nuts and cardamoms - grated |
Directions:
1. Boil 5 1/2 C until thickens and reduced to half the quantity . 2. Add the the sugar and boil 10 mins . 3. Add the cornflour to 1/2 C milk and add to the above . 4. Boil few mins . 5. Add the mawa and remove from fire at once . 6. Pour the essence , flavourings, dried fruits, cardamom, etc. are whatever you are using 7. Cool it . 8. Fill the paste in the moulds ( prefer the conical shapes ) 9. Seal tightly and freeze . 10. Garnish . |
