My friend Steve mother Dolores gave me this recipe. She said she got it from the Chicago Sun Times many years ago Ingredients:
4 lbs potatoes |
1 large onion |
3/4 lb bacon |
1 small can evaporated milk |
6 eggs |
salt and pepper to taste |
Directions:
1. Peel and grated potatoes and onion 2. Cut bacon in small pieces and fry pour fat and bacon into potatoes mixture 3. Beat eggs add to the mixture 4. Add milk salt and pepper 5. Mix well 6. Pour into a greased pan and bake At 350 f for 1 hr 15 min or until top is light brown |
