Using small mini muffin mold, this is an Indonesian version of what US called muffin. Ingredients:
500 g flour |
500 ml coconut milk |
7 g yeast |
3 tbsp margarine |
1/2 tsp salt |
250 g sugar |
5 eggs |
Directions:
1. Mix-1: Beat sugar and eggs until harden. 2. Mix-2: Mix flour, yeast, add vanilla powder if available 3. Mix-3: warm the coconut milk and salt 4. Add Mix-3 to Mix-2 slowly while stirring until mixed. 5. Add Mix-1 to above slowly while stirring, mix well. 6. Let the dough sit covered with paper towel or kitchen towel, in a warm environment until the dough rises to twice the original size. 7. Preheat oven 350°F and heat the mold. 8. Once mold is hot enough and the dough risen, pour the dough into the mold 3/4 way and add chocolate sprinkles or cheese (grated) or raisin on top. 9. Baked for 15-17 minutes. Let cool, and eat up. |
