a fantastic crunchy mix of diced veggies and garbanzo beans that goes well with any dressing or sauce you could imagine. Very healthy, packed with protein! Ingredients:
1/2 cucumber |
1 small zucchini |
1 green bell pepper |
1 head broccoli |
1 (14 ounce) can garbanzo beans, drained |
Directions:
1. dice all veggies. 2. drain garbanzo beans. 3. mix all ingredients together. 4. top with dressing/sauce of your choice. I love it with honey dijon. 5. Makes 4 lunch sized servings, or 6-8 as a side salad. |
