Ingredients:
1 can(s) 15oz tomato sauce
1 cup(s) beef broth
5 stalk(s) chopped celery
1/2 package(s) ditalini
2 tablespoon(s) each oregano and basil
1 can(s) great northern beans drained and rinsed
1 can(s) kidney beans drained and rinsed
1 pound(s) lean ground beef
1 large chop. onion
1/2 teaspoon(s) pepper
2 can(s) petite diced tomatos
1 teaspoon(s) salt
1/2 package(s) shredded carrots
2 1/2 cup(s) spicy v8
1 teaspoon(s) thyme
1 tablespoon(s) white vinegar
10-12 clove(s) minced garlic
1/4 cup(s) fresh italian parsley, chopped
hot pepper sauce to taste
Directions:
1. brown beef in large pot over medium heat, drain fat. add vegetables including minced garlic cloves. saute 10 minutes. add rest of ingredients except pasta, simmer 2-3 hours. Cook pasta ( al dente) separately drain and add to soup. simmer 10 minutes longer. Spoon into bowls and top with freshly grated parmesan cheese.
