KROPPKAKOR This is a recipe I obtained from an estate sale. I obtained it when I purchased the family collection from the Crawford Estate in Quinlan, Texas in 1982. “This is a really a good dish of potato balls with pork. Read more .” Ingredients:
1/2 pound salt pork |
1 large white onion |
1-1/2 cups cold mashed potatoes |
2 cups flour |
1 teaspoon salt |
1 egg |
1/4 teaspoon pepper |
cream gravy |
Directions:
1. Cut meat into 1/2” cubes and fry with diced onion until nearly done. 2. Combine mashed potato, unbeaten egg, salt and pepper then blend well. 3. Add 1/2 of the flour and mix well then knead the rest of flour into dough using a bread board. 4. Make tiny balls and open the center of each. 5. Into this opening put a portion of the meat and onion mixture. 6. Close the opening and roll in flour then drop into a kettle of boiling water and cook 30 minutes. 7. Serve with a cream gravy. |
