This recipe was given to me by a dear friend, Kristi Olivieri. She brought me in a bag of these to the office one day during the Holiday time. I shared them with the girls at the office and brought the rest home to my husband who absolutely loved them. Kristi says: Great paired with a glass of wine. Also great for gift giving. Happy Holidays everyone! Ingredients:
4 cups pecan halves |
1/2 cup butter |
2 extra large egg whites, at room temperature |
1 cup sugar |
1/2 teaspoon salt |
Directions:
1. Preheat oven to 250 degrees F. Bake pecans on cookie sheet for 30 minutes. Remove pecans from pan, and put butter on cookie sheet. 2. Increase the oven temperature to 300 degrees F. Melt butter on cookie sheet in oven. 3. Beat egg whites until they form soft peaks. Slowly add sugar and salt, while continuing to beat. Beat until egg whites thicken. Fold in pecans. 4. Spread mixture evenly on the cookie sheet with butter. Bake in 300 degree F oven for 45 minutes, stirring every 15 minutes. 5. Cool pecans. Serve. Store in airtight container. |
