This bread is really a cracker in disguise. Break a loaf into pieces and enjoy with your favorite dips, cheeses or just by itself. It is an addictive snack food. Ingredients:
3 c bread flour + 1/2 c for bench flour |
1 c warm water |
1 pk yeast |
1 teas salt |
1/4 c olive oil |
2 t minced garlic or 2 teas powder garlic |
2 t italian seasoning blend |
2 t kosher salt |
1/4 c grated parmesan cheese |
1/2 c cold water |
2 squares of parchment paper 12 x 12 or larger |
Directions:
1. Mix the warm water, honey, and yeast together. Proof for 10 minutes 2. In a large bowl combine flour, salt, and oil. Mix well 3. Add yeast water. MIx. 4. Knead bread for 7-8 minutes using a little bench flour if needed. Dough should be slightly tacky, soft, and pliable. 5. Brush surface with a little oil, cover with a cloth and left rise in a warm space until doubled in size. 6. Preheat oven to 500 F with a pizza stone on the middle rack 7. Punch down the dough and divide into 6 equal pieces 8. Roll out one of the piece to a 10-12 circle then stretch the dough out a little more. Use a little bench flour if needed. 9. Transfer the circle to a piece of parchment paper. 10. Use a fork to pierce the surface of the dough all over 11. Lightly brush with cold water (as light as possible) 12. Sprinkle with 1 teas each: minced garlic, Kosher salt, Italian seasoning 13. Sprinkle with 2 teas Parmesan cheese 14. Place on stone and bake for 6-7 minutes. Bread will bubble slightly and should be toasted (remember it is a cracker) 15. Remove from Parchment paper (and reuse for another loaf) and cool on a rack. 16. When cool, break into pieces and serve with your favorite dips. 17. Note: you can score the loaf before cooking to break it into regular sized pieces. 18. Substitute equal parts brown and white sugar mixed with cinnamon for the garlic,Italian seasoning, salt, and Parmesan. A sweet treat. |
