A little different, and easy to make. I got my first one from a street vendor in Daegu, South Korea one morning and was surprised how good it was.
Ingredients:
4 pieces regular white bread
1 tbl butter
2 eggs
2 tbl chopped cabbage
1 tbl chopped carrot
1 tbl chopped onion
1 tbl brown sugar
1 tbl ketchup
Directions:
1. In a bowl, whisk the eggs, cabbage, carrot and onion.
2. In a saute pan, melt some of the butter and toast both sides of the bread over medium heat, adding butter as needed.
3. Remove bread and sit aside.
4. Fry egg mixture in the remaining butter until done, like an omelet.
5. Separate egg into two portions and place on two pieces of toast.
6. Top with ketchup and sprinkle with brown sugar.
7. Top with remaining slice of toast, cut in half and serve.
