A delicious, sweet and sour beansprout salad I've had served with my meal at Korean restaurants. Alter the amount of pepper flakes to taste, I like it medium-hot. Ingredients:
1 pound fresh bean sprouts |
1/2 tbsp toasted sesame seeds |
1 tsp honey |
3 tbsp low-sodium soy sauce |
1 clove garlic (crushed) |
1/8 tsp red pepper flakes |
1 1/2 tbsp vegetable broth |
2 scallions, minced |
Directions:
1. Bring a large pot of water to a boil. 2. Add bean sprouts and cook 1 minute. Drain and shock immediately in a bowl of ice water. 3. Combine remaining ingredients in a small bowl, drizzle over sprouts and toss. 4. Refrigerate 1 hour before serving. |
