Kolukattai Or Sweet Dumpling |

Makes 13 dumplings . The skin will be very soft . It makes a great difference when you make your own dough rather than using the instant powder from the super market . One of my favourites . Ingredients:
outer skin |
1 c raw rice , soaked for 1 hr |
1 tsp salt |
1/2 c milk |
1 tbsp olive oil |
fillings |
1 c fresh grated coconut , 1/2 c jaggery , 3 cardamoms , 1 tsp ghee - fry until thickens |
or |
1 c fresh grated carrot , 1/2 c caster sugar , fried nuts , 3 cardamoms , 1 tsp ghee - fry until thickens |
or |
6 cashewnuts , 6 almonds , 2 dates , 3 cherries , 12 raisins , 2 tsp sugar , 3 cardamoms , 2 tsp fresh grated coconut , 2 tsp roasted poppy seeds - mix well |
Directions:
1. Add water and make a paste with the rice and salt in a food processor . 2. Heat a pan . Add the oil , paste and milk . 3. Stir until it thickens and roll into a dough . 4. Make 13 balls . 5. Flatten it abit and put the filling in the middle and cover it . 6. Seal the edges . 7. Steam for 5 mins and serve warm . |
