3 cucumbers, peeled seeded and grated |
3 celery ribs, chopped |
8 radishes, grated |
6 scallions, chopped |
2 cups ice cubes |
2 cups half-and-half |
1/2 cup white vinegar |
1/2 cup water |
3 hard-boiled eggs |
salt and pepper, to taste |
Directions:
1. Place cucumbers, celery, radushes, and scallions in a medium bowl. 2. Cover with ice cubes and refrigerate 1-2 hours until veggies are crisp. 3. Remove any unmelted ice cubes. 4. Add half-andhalf, vingar, water, eggs. Stir to combine. 5. Season to taste with salt and pepper. Serve immediately. |
