An african currant coffee cake, of sorts. Ingredients:
8 ounces butter |
2 cups sugar |
5 eggs |
1 1/2 cups flour |
2 teaspoons cream of tartar |
1 pinch salt |
1 tablespoon milk |
1 teaspoon baking soda |
6 ounces currants |
1 teaspoon lemon juice |
Directions:
1. Cream together butter and sugar, then add the beaten eggs, flour, cream of tartar and salt. 2. Dissolve the baking soda in the milk and beat this into the batter. 3. Finally add the lemon juice and currants. 4. Pour into a greased pan and bake at 325 degrees for about 20 - 30 minutes. |
