High up in the Waimea Canyon, on the Island of Kauai, in the Kokee State Park, you'll find the Kokee Lodge. This is the recipe for their famous corn bread. I was surprised to find that it has Bisquick in it! Ingredients:
3 eggs |
1 1/4 cups milk |
1/2 lb butter, melted |
3 cups bisquick |
1 cup sugar |
2 1/2 teaspoons baking powder |
1/4 cup stone-ground cornmeal |
Directions:
1. Whisk together eggs and milk. 2. Combine dry ingredients. 3. Add egg-milk mixture and melted butter. 4. Pour into a 9x13 pan. 5. Bake at 350° for 30 to 35 minutes. |
