Kohrabi definitely is unique - with the look and texture of cabbage when chopped but with a slightly milder than horseradish taste. This salad tempers that slight spiciness with a very creamy dressing. It was a pleasant surprise to eat! Read more ! This one came from my CSA wh. Ingredients:
1 pound of fresh kohlrabi, trimmed, peeled, grated or cut into strips |
add any other crunchy veggie of your choice: broccoli, bok choy,radishes, carrots |
fresh mint, chopped |
dressing |
1/4 c. cream |
1 tbsp. fresh lemon juice |
1/2 tbsp. mustard |
pinch celery salt, to taste |
1/2 tsp. sugar |
salt & pepper to taste - go easy here |
Directions:
1. Whisk cream into light pillows - this takes a minute or so, no need to get out a mixer. Stir in remaining dressing ingredients, the kohlrabi and other crunchy veggies. Serve immediately. |
