If you've never had(or heard of;) kohlrabi before it is yummy! It is a cross between a cabbage and a turnip and has a sweet earthy flavor when cooked. You can also cook the tops like turnip greens! Ingredients:
4 small kohlrabi, thinly sliced |
1/2 thinly sliced kohlrabi leaves(set aside) |
2 tbsp finely chopped onion |
1/2 cup shredded parmesan |
1/2 cup whipping cream |
1/4 tsp salt |
1/4 tsp pepper |
3 tbsp seasoned fine dry bread crumbs |
Directions:
1. Preheat oven to 350 2. Layer half of the slices on bottom of buttered shallow 1 qt casserole dish 3. layer with half the onions, 3tbs cheese,half the whipping cream, half the kohlrabi leaves, half the salt and half the pepper(do you sense a pattern here:)) 4. Repeat(big DUH) 5. Top with remaining cheese and bread crumbs 6. Bake covered for 30 uncovered for 15 7. If you don't know how to select kohlrabi here are a couple of tips! 8. Choose the smallest ones you can find, they should be free of cracks and fibers. Leaves should be crisp and green with no yellowing. |
