This is the only potato salad that I like and I'm always asked to bring the potato salad to any get-togethers. Cooking time is chill time. Ingredients:
8 cups potatoes, cooked, cooled and sliced |
8 eggs, hard boiled and chopped |
2 cups celery, chopped |
1/2 cup green onion, chopped |
1 cup buttermilk |
2 (1/4 ounce) envelopes unflavored gelatin |
2 cups mayonnaise |
1 cup sour cream |
1 tablespoon mustard |
2 tablespoons sugar |
1 tablespoon salt |
Directions:
1. Combine potatoes, eggs, celery and onions in a large bowl. 2. Heat buttermilk and dissolve gelatin in it using a wire whip to get out any lumps. 3. Add sour cream, mayonnaise, sugar, mustard and salt to buttermilk mixture. 4. Pour buttermilk mixture over potatoes and chill for several hours. It will be very soupy but will set up when chilled. |
