Klare's Chocolate Pecan Pie |

This is a scrumptious pie for any holiday or special occasion! Ingredients:
1/2 cup butter, melted |
1 cup light corn syrup |
1 cup sugar |
1/2 cup cocoa powder |
4 eggs |
1 teaspoon vanilla |
1/4 teaspoon salt |
1/2 cup pecans, chopped |
1/2 cup flaked coconut |
1 (9 inch) unbaked pie shells |
Directions:
1. Preheat oven to 325. 2. Combine butter, light corn syrup, sugar and cocoa into a heavy sauce pan and cook over LOW heat stirring constantly until sugar is dissolved. Let cool. 3. Add to the mixture: 4 eggs, 1 teaspoon vanilla and 1/4 teaspoon of salt. Stir well. 4. Add to the mixture: 1/2 cup chopped pecans and 1/2 cup flaked coconut. 5. POUR filling into a 9 inch UNBAKED pie shell and top with 1/2 cup of pecans. 6. Bake at 325 degrees for 55 minutes. |
