A dish served at Christmas in Iceland. Ingredients:
1 kg lamb, cut in chunks |
1 1/2 liters water |
1 onion, coarsely chopped |
500 g white cabbage, chopped |
4 carrots, sliced |
500 g swede, peeled and cut into chunks |
1/2 cup rice |
1 tablespoon salt |
1 teaspoon pepper, white |
Directions:
1. Place lamb in large pan and cover with water adding seasoning and bring to the boil. Skim of the scum as it rises to the top and cook for 30 minutes. 2. Add the vegetables and rice and cook a further 45 minutes. |
