The Swedish smörgåsbord, literally sandwich table, dates back to the time when people came long distances for family events. This little bite is the perfect addition to your sandwich table assortment. From the Minnesota Scandinavian chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947. Ingredients:
1/2 cup breadcrumbs (fine, dry) |
1/2 cup cream |
1/2 lb beef |
1/4 lb veal |
1/4 lb pork |
1/2 cup milk |
2/3 teaspoon salt |
2 egg yolks, slightly beaten |
2 tablespoons onions, minced |
1/3 teaspoon pepper |
1/8 teaspoon allspice |
4 tablespoons fat |
Directions:
1. Soak crumbs in cream. 2. Grind meat together three times, using fine blade. 3. Combine all ingredients except fat and mix well. 4. Shape into small balls and brown in hot fat. |
