Whenever I have left over ham, I'm sure to make this main dish salad. Once I start to eat it, it is so hard to stop!!! Ingredients:
2 1/4 cups water |
1 cup brown rice |
2 tablespoons butter |
1/4 cup chopped onion |
1/2 cup chopped celery |
1/2 teaspoon curry powder |
1 cup plain yogurt |
1 teaspoon fresh lime juice |
1/2 teaspoon lime zest |
1 teaspoon white sugar |
1 kiwi, peeled and chopped |
4 ounces cooked ham, julienned |
2 ounces swiss cheese, cubed |
1/3 cup cashews |
1/2 cup fresh mushrooms, coarsely chopped |
2 kiwis, peeled and sliced |
Directions:
1. Combine water and rice in a medium saucepan. Bring to a boil. Cover, reduce heat, and simmer for 45 to 50 minutes. Cool. 2. Heat butter in a skillet over medium heat. Cook onion and celery in butter until tender, stirring frequently. Season with curry powder, and continue cooking for one minute. 3. In a large bowl, mix together yogurt, lime juice, lime zest, and sugar. Stir in rice, onion and celery mixture, chopped kiwi, ham, cheese, nuts, and mushrooms. Arrange sliced kiwi over salad. |
