I know very little about Aussie and NZ food so I enlisted my friends on Facebook from these countries for help. This is one of the recipes that they sent me. I will have go with this myself the next time kiwifruit is on sale here. Ingredients:
15 kiwi fruits |
2 large granny smith apples |
1 teaspoon mixed peppercorns |
1 teaspoon mustard seeds |
500 ml apple juice |
100 ml white wine vinegar |
1 cup white sugar |
Directions:
1. Peel and cut the kiwifruit and apples into chunks, keep separate. 2. Use a mortar and pestle to lightly grind the peppercorns and mustard seeds. 3. Pour the apple juice, white wine vinegar and sugar into a pot and simmer for 15-20 minutes until slightly reduced. 4. Add peppercorns, seeds and apple chunks then bring to the boil and simmer for 2 minutes. 5. Add Kiwifruit and simmer for no more than 2 minutes. 6. Pour straight into hot jars and seal. 7. Best after 2-3 weeks of soaking in and serve cheese and crackers. |
