I don't remember where I got this, I've had it forever. Ingredients:
2 eggs |
1/2 cup sugar |
1/4 cup oil |
4 large very ripe kiwi, mashed |
1/4 teaspoon vanilla |
1 tablespoon lemon juice |
3 cups flour |
1 1/2 teaspoons salt |
3 teaspoons baking powder |
1 1/2 teaspoons baking soda |
Directions:
1. Preheat oven to 350ºF grease 12 count muffin pan. 2. Blend the eggs, sugar and oil. Then add kiwi, vanilla and lemon juice. 3. In a seperate bowl combine flour, salt, baking powder and baking soda. Mix well, then fold into the wet ingredients. 4. Fill muffins cup and bake for 25-30 minutes. |
