A new take on an old favourite, witha healthier dressing and great flavour Ingredients:
1/3 red cabbage, chopped |
1 red onion. finely chopped |
2 carrots, peeled and grated |
2oz peanut oil |
1oz balmsamic vinegar |
1 tsp soft brown sugar |
2 tbsp pickled ginger, shredded |
salt and pepper to taste |
Directions:
1. add vegetables to a bowl 2. add dressing ingredients 3. add shredded ginger 4. add salt and pepper to taste 5. toss and serve 6. * - for nut allergies, change to rice bran oil or good old EVOO 7. ** - in NZ we get this in the supermarket, you may find it in the Asian/Japanese section. It's the pink ginger sold wet in it's pickling juice. Just drain and shred the equivalent of one inch of fresh ginger 8. You can add more dressing (in proportion) if you want a wetter 'slaw. |
