KIWANO PINEAPPLE SALSA This recipe came from an estate sale. I obtained it when I purchased the family collection from the Montgomery Estate in Crawford, Texas in 1981. Ingredients:
1/2 cup diced kiwano melon |
1/2 cup fresh pineapple chunks |
1 teaspoon minced jalapeno pepper |
1/4 cup chopped red onion |
2 tablespoons olive oil |
1/2 teaspoon minced garlic |
1 tablespoon raspberry vinegar |
1 tablespoon lime juice |
2 tablespoons fresh cilantro |
1 teaspoon pepper |
Directions:
1. Combine melon, pineapple, jalapeno and onion in bowl. 2. In separate bowl whisk together oil, garlic, vinegar, lime juice and spices. 3. Pour over salsa and toss gently. |
