A sweet, delicate, chewy cookie with enough citrus to pucker your lips...thus the name! Ingredients:
2 sticks butter, softened |
2 cups sugar |
3 large lemons(for zest and juice, divided) |
3 limes(as above) |
2 eggs |
3 1/2 cups flour |
1t baking powder |
1t baking soda |
1t salt |
**extra ingredients needed for glaze |
3-4 cups powdered sugar |
water |
Directions:
1. Beat butter , eggand sugar together. 2. Add to this, the zest of 1 lemon(about 2T), the zest of 1 lime(about 1T), the juice from 1-2 lemons(about 4T) nd the juice of 1-2 limes(about 2T) 3. Add dry ingredients and stir to combine well. 4. Drop by rounded tablespoons at least 2 inches apart(these cookies spread and get thin, so don't make them too big or place too close together) 5. Bake at 350 for 12-14 minutes until edges just begin to brown. 6. Let cool a couple minutes before transferring to cooling rack. 7. ***To make Glaze/icing** 8. Combine sugar and butter and blend well. Add about 2T lemon juice and about 2t lime zest. 9. Mix well then slowly add water til desired consistency. 10. Lightly spread on cooled cookies. |
