Ingredients:
2 lbs jumbo shrimp or 2 lbs colossal shrimp, shelled and deveined |
1 cup flour |
1/2 teaspoon salt |
1/2 teaspoon pepper |
2 eggs, beaten for 10 seconds |
16 fluid ounces extra virgin olive oil |
1 lemon, cut into 8 wedges |
Directions:
1. Mix together the flour, salt and pepper. 2. Rinse the shrimp under cold water and dredge them in the flour mixture. 3. Dip them in the egg and then fry them in batches in hot oil (about 8 minutes). 4. Serve with lemon wedges. |
