Make potato salad a main course with this simple recipe. The proportions are entirely up to you, and will come out great no matter what. Really. Ingredients:
4 good size russet potatoes |
4 stalks celery - cut into fine dice |
1 lb bacon - cut up into 1 inch pieces before cooking |
1 large onion - cut into fine dice |
3-4 large king crab legs - shells removed and hand shredded |
old bay seasoning |
mayo |
Directions:
1. Cut potatoes into 3/4 inch cubes (leave skins on) 2. Put in boiling water - cook until tender 3. While boiling the potatoes fry the bacon over medium heat 4. Drain the potatoes 5. Combine the potatoes, bacon, onion, celery, and crabmeat in a large bowl 6. Add a few good shakes of Old Bay seasoning. 7. Add mayo, starting with 2 T and gently fold together with a large spoon or by hand. Continue adding mayo until everything is well lubricated. 8. Serve. 9. I don't add salt as the bacon adds enough for my taste, but you can certainly season as you desire. |
