My friend is Korean and toured me through the local store. I was introduced to the wonderful world Korean groceries - which included various types of kimchi. Delicious and from what I understand, very good for the health. Read more . I just drummed up a soup with kimchi and miso paste. It turned out really fantastic. Ingredients:
1/2 cup cabbage kimchi, roughly chopped |
1/4 cup radish kimchi, roughly chopped |
1 tsp grated fresh ginger |
2 - 3 tbsp of miso paste (depends on how salty you like it) |
3 cups of water |
green onions/scallions, chopped |
good squeeze of asian sirachi chili sauce if you like it spicy |
Directions:
1. Put kimchis and ginger in pot on medium heat. Sweat for a few minutes. 2. Add miso paste and water. Bring to boil and reduce heat. 3. Simmer on low for 5 minutes. 4. Add chili sauce. 5. Serve in bowls and garnish with scallions/green onions. |
