A old school french dressing, that lends it self to modifications well. A must try Ingredients:
3 large shallots or green onions finely chopped |
1 stalk celery |
liberal amount of parsley |
1 teaspoon salt |
1/2 teaspoon fresh ground black pepper |
1/2 teaspoon dried sweet basil |
pinch of rosemary (about 1/8 teaspoon.. or to taste) |
pinch of marjoram (about 1/8 teaspoon.. or to taste) |
1 1/3 cup salad oil |
2/3 cup tarragon flavoured red wine vinegar (must be tarragon flavoured) |
Directions:
1. Chop shallots, celery and parsley together until fine as ground coffee (use a food processor) 2. Combine this mixture with remaining ingredients. 3. LET STAND SEVERAL hours to blend flavours. (overnight in fridge) 4. Served well chilled on a salad. 5. This is a 100% Love-it or 100% Hate-it dressing.... |
