I know it's not summer yet, but I was craving sausage and apples back before Christmas and came across this recipe in my favorite book. I got the craving again today and just finished it up and into the fridge to chill it went. Read more . I hadn't been on here in awhile, so I decided to share this one. If you're like me and are dreaming of warm things to come, give this one a try.....you'll be glad you didn't wait 4 more months! Ingredients:
1 pound fully cooked smoked kielbasa or polish sausage |
1 can (15-1/2oz.) black-eyed peas, rinsed and drained |
2 medium tart apples, cut into 1/2-inch thick chunks (no need to peel) |
1 medium green or red pepper, chopped |
4 large green onions, thinly sliced |
dressing |
1/3 cup vegetable oil |
3 tbs. cider vinegar |
1 tbs. dijon mustard |
2 tsp. sugar |
1/2 to 1 tsp. freshly ground pepper |
Directions:
1. Halve the sausage lengthwise and cut into 1/4-inch slices. 2. In a non-stick skillet, brown sausage and drain on paper towel. 3. In a bowl, combine peas, apples, green or red pepper, onions and sausage. Combine dressing ingredients in a small bowl; mix well and pour over sausage mixture. Toss to coat. 4.
