One of those soups that come together quickly using cole slaw mix and a cooked kielbasa. Perfect with a dark brown bread spread with sweet butter. My Polish stepgrandma would serve this with cucumbers and onions in sour cream. Read more . Delightful. Ingredients:
1 bag of angelhair coleslaw mix - publix sells a fine shred cabbage mix that we always use |
2 carrots, shredded |
1 large onion, cut in half and thin slivered as thin as possible |
1/2 cup of celery (2 ribs, stringed) chopped |
1/2 tsp of caraway seeds |
1 full carton of best flavored chicken broth (don't skimp with the cheap stuff, think bam) |
1 ring of fully cooked kielbasa, cut in 1/2 inch chunks |
2 unpeeled chopped golden delicious apples |
1/2 tsp of pepper |
1/8 tsp of salt |
Directions:
1. In a large saucepan, saute the coleslaw mix, carrots, onions, celery and caraway seeds in a knob of butter for about 5 - 8 minutes until the veggies are still crisp tender and the caraway is fragrant. 2. Add the remaining ingredients. 3. Bring to a boil. 4. Reduce heat and simmer uncovered for 20 minutes, stirring occasionally. |
