Kids Favorite Chicken Taco Stuffed Pies |

Ready, Set, Cook! Special Edition Contest Entry: My kids love when I make these fresh bread stuffed pies. I sometimes fill them with apple pie filling. I usually make up the dough and let it rise while I get other things done. Then when the kids are feeling hungry I assemble them into a great snack or treat. The added potato makes this dough so great. Also great for pizza's. Ingredients:
3 cups bread flour, plus more for kneading |
3 tablespoons sugar |
1/2 cup milk |
1 egg |
1 teaspoon cumin |
1/4 cup butter |
1/2 cup simply potatoes traditional mashed potatoes |
1 (1/4 ounce) package yeast |
1 teaspoon salt |
2 chicken breasts |
3 tablespoons taco seasoning |
1/4 cup green onion, diced |
1/4 cup cilantro, diced |
1 cup cheddar cheese, shredded |
Directions:
1. In a large bowl combine flour, salt and yeast. 2. In a pan over medium heat combine milk, butter, sugar, potatoes and cumin. Heat until sugar dissolves but do not boil. Add to the flour and combine using a wooden spoon. If dough is sticky add more flour. Place dough on a floured surface and knead for 3 minutes. Place in an oiled bowl and put in a warm spot to rise for 1 hour. 3. In a pot add chicken and 6 cups of water over medium high heat. Boil chicken for 20 minutes. Remove from water and cut into cubes-reserve 1/4 cup water. In a bowl combine reserved warm water and taco seasoning; mix. Add chicken, green onions, cilantro and cheese. 4. Take a baseball sized piece of dough and roll it out. Place 1/4 cup chicken mixture on one end and fold other side over to form a pie. Repeat with remaining ingredients. Place on a greased cookie sheet and let rest for 15 minutes. Bake in a 350 degree oven for 20-25 minutes or until golden brown. Serve immediately. |
