This is one of my children's favorite meals. It has protein, vegetable and starch so I'm happy too. Easy to prepare and can be frozen for make-ahead cooking. Ingredients:
1 1/2 lbs lean ground beef |
1 1/2 cups chopped onions |
1 garlic clove |
1 (10 3/4 ounce) can tomato soup |
1/2 teaspoon salt |
1/4-1/2 cup chili sauce |
1 (16 ounce) can green beans, drained |
1/4 teaspoon pepper |
2 cups mashed potatoes (use leftovers or instant) |
1 cup cheddar cheese, shredded |
Directions:
1. Brown ground beef and onions, drain off excess fat. 2. Add in remaining ingredients except potatoes and cheese. 3. Mix thoroughly and pour into 1 1/2 quart casserole dish. 4. Spread mashed potatoes on top of meat mixture. 5. Bake at 350°F for 15 minutes. 6. Sprinkle cheese over top and cook for another 15 minutes. 7. To make and freeze: Freeze with cheese attached in separate bag. 8. When thawed, bake as instructed above. |
