Love the flavours in this one, makes a great Summertime lunch Ingredients:
1 (420 g) can kidney beans, rinsed and drained |
2 medium tomatoes, chopped fine |
1/2 yellow capsicum, chopped fine |
1/2 red capsicum, chopped fine |
1 avocado, chopped into chunks |
1 tablespoon finely chopped fresh cilantro leaves |
2 tablespoons lime juice |
Directions:
1. Combine all ingredients together and serve with either warm flour tortillas or corn chips. |
