I substituted ground bison for ground beef to cut down on fat and cholesterol. Great to freeze and nuke to reheat. Ingredients:
2 lbs. ground bison |
3 cups onions, chopped |
3 tbsp extra virgin olive oil |
2 cans condensed tomato soup |
8 oz. elbow macaroni, cooked |
20 oz. canned kidney beans |
1 ground black pepper to taste |
2 tbsp chili powder |
1/8 tsp. cayenne pepper |
1/2 cup cheddar cheese, grated |
Directions:
1. Preheat oven to 375 degrees. 2. Heat olive oil over medium-high heat until smoking. Add onions and saute 3 minutes. Add ground meat and brown. 3. Add soup and spices to taste. Simmer 15 minutes. Add macaroni and beans; mix well. 4. Spoon into casserole dish and top with cheese. Bake at 375 degrees for 20 minutes. |
