Kid Approved Pumpkin Soup |

My seven-year-old makes this soup. Delicious, comforting, and beautiful served in a small hollowed-out pumpkin. My four-year-old licks her lips at the thought of it! Ingredients:
2 tablespoons butter |
1 red apple, peeled and diced (we use fuji) |
1 (15 ounce) can plain pumpkin puree |
1 teaspoon salt |
1 teaspoon pepper |
1 tablespoon sugar |
1/4 teaspoon nutmeg |
1 cup apple juice |
2 cups broth, chicken |
1/4 cup half-and-half or 1/4 cup heavy whipping cream |
Directions:
1. Cook the apple in the butter on medium heat in a soup pot for about 5 to 7 minutes, until the apples are tender and even a little browned on the edges. 2. In a bowl, mix together the pumpkin, sugar, salt, pepper, and nutmeg. 3. Add the pumpkin mixture to the apples and stir. 4. Slowly add the apple juice and broth. Heat until well-heated, but not boiling. 5. Stir in the cream or half and half and serve in a bowl or a small hollowed out pumpkin. |
