Kickin Swiss Cheese Circles

These are cute to add to a serving tray with vegetables and dips. Really easy to make and something a bit different.
Ingredients:
1-1/2 cups all-purpose flour
1-1/2 sticks butter, softened
salt to taste, you don't need much because of all the cheese
ground red pepper, to taste
3 cups shredded swiss cheese
1 egg, slightly beaten
Directions:
1. Preheat oven to 425°
2. In a large bowl, with hand, knead flour, butter, salt, ground red pepper and 2-1/2 cups of cheese.
3. Knead until well blended.
4. Shape dough into 1-inch balls.
5. Place balls about 2 inches apart on an ungreased cookie sheet.
6. Flatten each ball into 1/4-inch thick round.
7. Lightly brush tops with beaten egg.
8. Sprinkle with remaining cheese.
9. Bake 10-12 minutes until browned.
10. Remove cheese rounds from cookie sheet and cool on wire racks.
