Kickin Pimento Cheese Spread |

Used up some odds and ends to fix a kicked up version of pimento cheese for celery stuffing, or toasted on a slice of bread. A small scoop on top of a bland turkey burger elevates the mundane to special. Ingredients:
1 lb of grated cheddar cheese (sharp for me) |
4 ounces of fire roasted red peppers, drained and chopped |
2 small chipotle peppers in adobo, minced |
1 bunch of green onions. white part only chopped |
1/2 cup plus one tbsp of mayonnaise |
1/2 tsp of white vinegar |
2 tsp of sugar |
1 1/2 tsp of smoky paprika |
1/2 tsp of salt |
1/2 tsp of white pepper |
Directions:
1. Sir the cheese, peppers and onions together. 2. Whisk vinegar and seasonings into mayo. 3. Fold into cheese mix. 4. Let sit overnight, taste and adjust seasoning to your preference. 5. I found I needed a pinch of salt and a touch of mayo for my taste. |
