Kickin' Creamy Chicken Soup |

Way off the beaten path of your usual chicken soup, this one adds a healthy dose of chipotles and veggies for a head clearing vitamin rich bowl of kick a cold yumminess! Ingredients:
3 cups cooked chicken(you can use left over as long as it's not heavily seasoned or spiced, or, just grill, bake, boil or braise your own!) cut into bite sized pieces |
1/2 lb bacon, fried crisp and crumbled, reserve 4t of bacon grease |
1 large onion, diced |
2 bell peppers, diced |
16oz fresh mushrooms, sliced |
4 cups chicken stock |
1 can chipotles in adobo sauce, peppers diced |
2t smoked paprika |
6oz fresh baby spinach(roughly chopped, if desired..i didn't |
1pt half and half |
kosher or sea salt and fresh ground black pepper |
to garnish |

fried onions(i used garlic/pepper) |
shredded white cheese....monterey jack swiss or havarti |
Directions:
1. In large soup pot, cook onion and pepper in 2T bacon grease until translucent and softening. 2. Add mushrooms and remaining 2T of bacon grease. 3. Saute about 5 minutes, then add stock, chipotles, adobo, paprika and chicken. 4. Let simmer on medium/low for about 30 minutes. 5. Add spinach and cook down about another 5-10 minutes. 6. Add half and half, salt and pepper, and stir to warm through. 7. Serve with crumbled bacon pieces, shredded cheese and fried onions, if desired. |
